This Hippie Dip Tomato Gazpacho is a refreshing, nutrient-packed cold soup combining ripe tomatoes, cucumbers, and sweet red peppers with earthy hemp hearts and a splash of balsamic vinegar. Blended to a smooth consistency, this no-cook gazpacho is perfect as a light lunch or appetizer, served chilled with optional toppings like fresh basil, smoked paprika, or cheese on toasted sourdough.

Ingredients

Vegetables

  • 4 cups ripe red tomatoes, chopped
  • 2 cups cucumbers, peeled and chopped (about 1 large cucumber)
  • 2 cups sweet red peppers, deseeded and chopped (about 2 medium peppers)

Liquids and Oils

  • 2 tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil

Add-ins and Seasonings

  • 1/4 cup hemp hearts
  • 1/4 tsp salt, plus more to taste
  • 1/4 tsp cracked black pepper
  • Optional: 1/4 tsp smoked paprika
  • Optional: handful fresh basil
  • Optional: pinch hot chili flakes

Instructions

  1. Combine ingredients: In a standing blender or food processor, add the chopped tomatoes, peeled and chopped cucumbers, sweet red peppers, hemp hearts, balsamic vinegar, extra virgin olive oil, salt, cracked black pepper, and any optional spices like smoked paprika, fresh basil, or chili flakes.
  2. Blend until smooth: Blend the mixture on high for 2-3 minutes, scraping down the sides as needed, until the soup is super smooth. If the consistency is too thick, add up to 1/2 cup water to thin it out and adjust the seasonings accordingly.
  3. Chill and serve: Serve the gazpacho immediately, or refrigerate for a few hours to allow the flavors to meld and deepen. Serve chilled, optionally topped with additional hemp hearts or sliced tomatoes.
  4. Optional serving suggestion: Serve the gazpacho in a big bowl over toasted sourdough bread (gluten-free if preferred) to soak up the soup. For an added savory touch, crumble goat cheese or add grilled halloumi on top.
